Non-hydrogenated Lard?
 
Does anyone know a good cheap source for non-hydrogenated lard? Everything in the store is hydrogenated but lard is so useful for baking. Or has anyone rendered their own?

I went to a local meat processor/meat shop and asked about this.

They said that they would not sell any rendered lard that did not have the hydrogenated preservatives put in it. Various dept of agriculture rules and legal liabilities essentially mean it's required.

They will sell fatback that you could render yourself, but you had to order it beforehand--because normally all the fatback they get, they render down into lard and add the preservatives.


Rendering isn't that difficult, but I haven't bothered to try it yet.

I save the lard from my pigs when we butcher them. I asked the butcher how much he would charge for me to get some more unprocessed fat, he gave me about 40 lbs free. I think they have to pay for it to be removed. Local butcher shops are great place to get free bones and stuff for the dogs.

There are several places on the web to find out how to render. It kind of stinks up the house a bit. Its not hard to do. But you will have your own clean lard at the end.

FYI in the old days, people used to preserve their raw meat in big crocks layered in lard.

At our local meat market, when people ask for "dog bones", the butcher's dead pan reply is "we don't kill dogs". It's always good for a laugh.

why not just render it outside , that how we do it , get a very large cast iron pot an hang it an built fire under it an add fat slowly

the only place that had a reasonable price limits you to 6 lbs and shipping sucks at that rate.

No. My FIL kept the fat from our last hog & took control of rendering it and didn't do it like I would have. His batch turned out a little yellow. Still usable, but not to my standards.

I'm trying to figure out a way to get the fat without him knowing and render the next batch myself. Will not be easy as that takes a while and he'll get his feelings hurt if I don't include him......

I will add that the local whole foods is giving me all the free fat scraps they have, unfortunately it looks like it is all beef

Tallow is suppose to be good for candles!
